Observed a can of Celsius on the prep line cooler. COS, the can was removed after reviewing with the PIC. Employee drinks should be located in a desigated area away from food prep. *Also noted that employee drinks should be in a cup with a straw - 2-401.11: (A) Except as specified in ¶ (B) of this section, an EMPLOYEE shall eat, drink, or use any form of tobacco only in designated areas where the contamination of exposed FOOD; clean EQUIPMENT, UTENSILS, and LINENS; unwrapped SINGLE-SERVICE and SINGLE-USE ARTICLES; or other items needing protection can not result. (B) A FOOD EMPLOYEE may drink from a closed BEVERAGE container if the container is handled to prevent contamination of: (1) The EMPLOYEE'S hands; (2) The container; and (3) Exposed FOOD; clean EQUIPMENT, UTENSILS, and LINENS; and unwrapped SINGLE-SERVICE and SINGLE-USE ARTICLES. - V,COS |

Facility had the back door propped open allowing the entrance of numerous flies. Observed the spoon to serve cole slaw in the server station cooler fully submerged in the coleslaw. Discussed this with the PIC, it was COS. In use utensils shall be stored with the handles above the food. - 3-304.12 (A): During pauses in FOOD preparation or dispensing, FOOD preparation and dispensing UTENSILS shall be stored: (A) Except as specified under (B) of this section, in the FOOD with their handles above the top of the FOOD and the container. - V,COS |

Numerous tiles are broken or loose in the pizza prep/dish room. This was noted at the last inspection. PIC stated that the landlord and facility will be working to re-do the entire floor in the coming months. He does plan to shut down the facility during this repair. - 6-101.11 (A): (A) Except as specified in ¶ (B) of this section, materials for indoor floor, wall, and ceiling surfaces under conditions of normal use shall be: (1) SMOOTH, durable, and EASILY CLEANABLE for areas where FOOD ESTABLISHMENT operations are conducted; (2) Closely woven and EASILY CLEANABLE carpet for carpeted areas; and (3) Nonabsorbent for areas subject to moisture such as FOOD preparation areas, walk-in refrigerators, WAREWASHING areas, toilet rooms, mobile FOOD ESTABLISHMENT SERVICING AREAS, and areas subject to flushing or spray cleaning methods. - V |
